Success!

In Belize the main food I ate was pasta carbonara. It was the best of all worlds: pasta and bacon. Especially bacon. I don't know what the Belizeans do to their pigs, but they have the best damn bacon on the planet.

So I've been trying to make pasta carbonara since I came home. I've found different recipes, all calling for different ingredients, all of which I've tried and found inedible. Four recipes in all.

Tonight, FINALLY, I have found a recipe that makes perfect carbonara. I ate it, and it was deeeelicious.
